As you can imagine, it's a complicated one. However, two researchers named Richard Axel and Linda Buck simplified it, winning a Nobel Prize.
It goes like this. When you come into contact with odors drifting through the air, olfactory receptor cells' neurons communicate to a part of our brain called the olfactory bulb. As the olfactory receptors process the scent, 1,000s of genes subset the odors into something almost like categories of emotions.
Because of how memory works (via the amygdala and the hippocampus), these memories or times are connected with a smell. When you revisit the scent, these emotions can come alive, transporting you back to that memory.
